Goose bresaola

The goose is part of the chicken family and as such chicken muscle does not get in fat and contains only 8% of it. The goose can also be raised lean with a cycle of five months and a weight of about 6,5 kgs.

THE BEST GOOSE COMBINATIONS

​With our goose products we tell you about the local history and about our territory. An area in which rams, channels, mills, farm houses and rice fields are the characteristic elements which were created by man over the last century. Elements dedicated to the production of fodder and to goose breeding which are notoriously greedy of fresh grass and running water. Today we want to tell you something about us not only through an elegant product of lean goose, but also through modern and delicate gastronomic proposals that also include other products of our territory such as truffles, rice and vegetables.

ONLY GOOSE MEAT AND TRADITION

The production is rigorously hand made according to a traditional recipe passed down from father to son . The goose skin, trimmed and sewn by hand, is still used as a skin case by participating in the formation of the typical “bouchet ! » of goose salami. The binding is still handmade with jute thread and the whole experience of the Vigevano craftsmanship.

In addition to the high quality of the product, the binding gives the characteristic shape to this traditional goose product.

LEAN GOOSE PRODUCTION CHAIN RAISED ON THE GROUND

The white geese are raised on the ground with natural feeding and without force feeding. The production cycle is only 5 months to reach a final weight of about 6.5 kg. This type of breeding also called “free range” allows you to get healthy and lean goose meat for a high quality raw material for our gourmet products.
