Cooked goose salami
Process
This local high quality goose product is made with the goose skin stuffed with its fresh lean goose meat and a goose fat. All the goose meat is minced and the other ingredients are then added (flavourings, spices and Cervia's sea salt). We use the goose skin case as a tradition to obtain the characteristic shape with side seams.
Then the fresh goose salami is packed under vacuum and cooked in oven for about 3 hours. At the end of the cooking process is immediately refrigerated to reach the right moisture balance and keep its intense taste.

How to use
The cooked goose salami should be eaten as appetizer, for preparing first courses as goose risotto, on pizza, on granary focaccia. Also in different food combinations with steamed and mashed potatoes.
