Goose galantine with Bronte Pistachio D.O.P.
Process
The goose galantine is made with the fresh goose meat with the addition of turkey breast and Bronte Pistachio. All the goose meat is minced and the other ingredients are then added (spices, flavorings and Cervia's sea salt). The mixture is packed under vacuum and cooked in the oven fat for about 2 hours. Then immediately refrigerated to keep the right moisture balance and its light taste.
How to use
It can be used as a complement to a dish of goose cold cuts, or crushed on the risotto or for a great goose meat sauce with tomatoes.
