Cristina Guarnieri illustrated the goose breeding process from beginning to end. Mr. Hamid Distefano's speech, Halal's certification C.E.O, explained in detail the requirements for the halal certification, not only for religious reasons but also for the high standards of the products and food processing.
At the end of the seminar, Mr. Gianluca Bellazzi spoke about how the production chain perfectly combines the best cuisine tradition in the Lombardia region and the hygienic requirements of international markets. At the end of the conference, for the first time a lunch was prepared with the Oca Sforzesca products combining the tradition and Halal requirements. The lunch started with an appetizer of focaccia with cooked goose product, goose bresaola rolls with dry tomatoes and Quartirolo cheese, goose breast marinated in thyme, cream of lentils and cream of broccoli topped with small pieces cooked goose salami.
