Description

This is a cooked goose salami with black truffle. It is without pork meat added and 100% Made in Italy.

Process

This cooked goose salami is made with the goose skin stuffed with its fresh lean goose meat, black truffle pieces and a goose fat. All the goose meat is minced and the other ingredients are then added (flavourings, spices and Italian sweet sea salt). We use the goose skin case as a tradition to obtain the characteristic shape with side seams.

Then the goose salami is packed under vacuum and cooked in oven for about 3 hours. At the end of the cooking process, it is immediately refrigerated to reach the right moisture balance and keep its intense taste.

How to use

This cooked goose salami should be eaten as appetiser, for topping risotto and on pizza. Also in different food combinations with steamed and mashed potatoes.
