Pressed goose cracklings
Process
This goose cracklings is made with the fresh goose meat with the addition of turkey breast. All the goose meat is minced and the other ingredients are then added (spices, flavourings and Cervia's sea salt). The mixture is cooked in a pot for about 5 hours. After draining it is pressed and cooled.
How to use
It can be used as a complement to a dish of goose cold cuts or as appetiser.
